“Stuff” – Cereal Coffee Cake

This is a recipe from my childhood. It was off a Nutri-Grain Cereal (I do not think they even make this kind anymore) box. It was one of my grandmother’s all time favorite coffee cakes.  This is an extremely dense and moist cake, almost to the point of being gooey.  It could be described as a cross between a coffee cake and bread pudding.  It
is very good in its own unique way.

Ingredients:
2 ½ Cups Flour - We often did half whole wheat here.
4 teaspoons Baking Powder
1 teaspoon Baking Soda
1 teaspoon Cinnamon
3 cups Cereal – This should be some type of whole-grain flake cereal. I used store brand Bran Flakes from Aldi’s. Many thanks to Frugal Mom from the Aldi Spot for introducing me to the wonders of Aldi’s.
1 cup Sugar (or ½ cup Honey)
2 cups Applesauce
¾ cup Apple Juice
2 eggs
1 teaspoon Vanilla

Topping:
½ Cup Chopped Nuts
¾ teaspoon Cinnamon
3 Tablespoons Date Sugar

(if you do not have Date Sugar (available in health food stores) use Brown Sugar and add 2 Tablespoons butter to make a crumbly topping mixture.)

Mix Nuts, Sugar, and Cinnamon for topping. Set Aside.


Mix Flour, Powder, Soda, and Cinnamon.

Mix Sugar, Eggs, Vanilla, Applesauce, and Apple Juice. Add in Cereal.

Add in Flour Mixture and mix until blended.

Pour into greased 9x13 pan. (I am using to 8x8 pans here because I want my grandmother to be able to bake one at her house.)

Sprinkle Topping on evenly.

Bake in preheated 350 degree oven for 45 minutes.
