Hearty French Toast

This is a hearty variation on the standard French Toast recipe. I am using homemade whole wheat bread to give it substance and texture. This is very filling. If you do not make your own bread, look for unsliced artisan bread at you farmer’s market or grocery store. You will also need a very heavy griddle or frying pan to keep it from scorching.





Ingredients:
Bread – See slicing instructions below
Eggs – 1 per slice
Milk 1 Tablespoon per slice
Cinnamon

Slice bread thickly. I usually do them about 1 inch thick.


Crack eggs and whisk together well. Add milk and whisk until thoroughly mixed.


Soak bread slices in egg mixture, turning often so that it absorbs evenly.


Heat greased griddle on Medium heat. Lay slices on griddle and sprinkle with cinnamon.


Cover with lid or cookie sheet and turn burner down to Low and cook for 6-8 minutes. Since these are so thick and so full of the egg mixture it is necessary to ensure that they are fully cooked so as not to cause problems with eating raw eggs.


Turn and replace lid/sheet. Cook for another 6-8 minutes. If you are still unsure if the egg mixture has finished cooking, cut one slice in half and check.


Variations:


Sprinkle with nutmeg instead of cinnamon


Add a drop or two of vanilla extract in with the egg mixture.
