Onions

Onions are used in many recipes and though many of us know which variety to select for which uses, I thought a short explanation would be of help to beginning cooks.


Yellow Onions

These are the most commonly used variety and are the “onion flavor” most people think about when they use onions.  These are usually the strong ones that make your eyes water.  They can be used in any recipe that calls for onions unless something else is specified.  They are available in bags or individually.

White Onions

These are a sweeter variety.  Vidalia onions are a subset of this group and are widely considered to be the most tasty.  These are commonly used as raw onions – on sandwiches and in salads.  (Do not accidentally use these in recipes where you want a stronger traditional onion flavor such as Sloppy Joes – I learned this the hard way.)

Red/Purple Onions

These are a decorative variety which are most often used as rings to top salads.  Use them where you want to make a big visual impact and need a dark or bright color to contrast with whatever else you are using.
